I am planning to upgrade Elasticsearch from 7.10 to 8.x. However I am not sure what will happen to multiple endpoints sending logs to ES using filebeat 7.10. Will I also need to upgrade the filebeat instances?

The support matrix is the best place to check. Looking at the matrix I see that 7.10 beats are not compatible with 8.x versions of Elasticsearch so you will need to upgrade the filebeat as well.
