welcome to the Kibana community.
Gradient colors, or partial conditional colors, are not supported by Kibana visualizations.
May I ask the need for such colorful chart type?

I think your only option for now would be to use Vega to build a chart type like this example: Bar Chart Highlighting Values beyond a Threshold | Vega-Lite
