I'm about to upgrade my elastic stack from 6.8 to 7.10 and I have a question for which I can't find the answer to online. Should I check all the breaking changes from all the minor versions between these two, or should I check only for 7.10 or only from 7.10 and 7.0? Thank you in advance.

I would upgrade to the latest 6.8 and use the Kibana Upgrade Assistant to let you know what you need to worry about within Elasticsearch. As for the breaking changes, I guess it depends on what you are using Elasticsearch for.
